Hamburger Fajitas

This was an idea that was a mix between a couple of different recipes and a fridge clean-out. It ended up being a family favorite.

Hamburger Fajitas

It is super easy, with just one skillet on the stovetop. The add-in possibilities and varieties are endless.

Ingredients:

  • 1 pound Hamburger

  • 1 red bell pepper, sliced

  • 1 yellow onion, chopped

  • 1 tbsp Mexican seasoning

  • 2 cups cooked rice (could use Mexican rice or cauliflower rice)

  • 10-12 oz salsa

  • 1 cup Mexican blend cheese

  • 2 tbsp chopped cilantro

Instructions:


Slice the pepper and chop the onion and set aside

In a stovetop pan, cook the hamburger, drain the grease, and set it aside.


Put the sliced peppers and onions into the pan, cook for 6-8 minutes until slightly tender.


Return the hamburger to the pan.


Add the seasoning and mix together.


Add cooked rice, salsa, cheese, and cilantro.


Mix together until well combined and heated through.


Add in or topping ideas:

Lettuce bowls

Sour cream

Refried beans

Avocado

Guacamole

Pico de Gallo

Tomatoes


This has no heat or extra spicy. If you like that, it's easy to heat it up with hot salsa or red pepper flakes.
