Cauliflower Nachos

This is one of the easiest and fastest things we eat. There are so many variations as with traditional nachos. Instead of chips, this uses cauliflower.

Ingredients:


One head of cauliflower

1 tbsp cooking coconut oil

One can of black beans

One jar salsa

2 cups of Mexican style cheese


Instructions:


Preheat oven to 400 degrees


Get out a large cookie sheet and line with parchment paper (aluminum foil would work too, I just prefer parchment paper)


Spray with a little cooking spray


Wash and cut your head of cauliflower into bite-size pieces


Put them in a bowl with a cover or a zip-top bag and add the Mexican (or a taco seasoning) and the oil. Shake it until it is all well coated. Dump it out onto the prepared parchment paper.


Bake for 20 minutes


When it's done, pull it out and add the black beans (drained and rinsed) and the salsa and top with cheese.




Bake another 7-10 minutes, until the cheese is melted.




Take it out and top to your heart's content. Green onions, olives, lettuce, tomato, guacamole, sour cream, anything you like on your nachos. You could add some cooked chicken with the black beans and salsa for more protein.
